HUNGARIAN CHICKEN PAPRIKA

(A la Les Murray)

NOTE: You can use chicken, beef, pork or lamb with the same recipe.
Servings: 4.
Ingredients
1kg chicken drumsticks
1 green capsicum, chopped
1 tomato, chopped
1 onion, chopped
2 cloves of garlic
2 small hot chillies, chopped
1 heaped tablespoon of mild paprika
Half tablespoon of butter (or you can use oil).
Salt to taste
2 cups of small-shell pasta or penne
Method
1. Chop the ingredients
2. In a saucepan fry onions and garlic for one to two mins in the butter or oil.
3. Put all other ingredients, except the pasta, in the pan and stir thoroughly, ensuring the paprika coats everything.
4. Cook on low heat, stirring regularly, for 35-40 minutes. The mixture will produce much liquid and a rich paprika sauce.
5. Separately cook the pasta al dente and strain.
6. In serving, set out the plate with the meat covering one half and the pasta the other half. Drizzle some of meat's sauce on the pasta and mix. This gives the pasta taste.

• Best served with Hungarian cucumber salad.
